At Nacro you can learn all about preparing food and drink, serving customers and taking bookings. You will be able to try out recipes for yourself, practice making drinks and prepare yourself for a really enjoyable job.

Funding and bursaries

Students under 19 will not have to pay fees providing you are legally in the UK. You may be able to access Bursary funding to help you with travel and meals depending on your personal circumstances.

Students aged over 19 may be eligible for free tuition depending on the course you want to study, your existing qualifications and your financial circumstances. This will be discussed at enrolment.

Entry requirements

Completion of a Level 1 Catering and Hospitality qualification. Grade 2 or above in English and maths or E3 Functional Skills.

What will I learn?

The course is designed for practical people as most of it is taught in our canteen. You will gain a high standard of cookery skills from processes, such as roasting and frying to commodities, whilst also learning other workplace essentials like menu design.

Work Experience

You will do at least two weeks of work experience to support your studies, gain experience and potentially develop contacts with future employers. Our team will help you secure a work placement and will provide you with everything required for you to attend your placement.


There are a range of units which could include:

Safe Working Practices for the Hospitality Industry
Introduction to Professional Cookery
Tools and Equipment used in Professional Cookery
Boiling, Poaching and Steaming
Baking, Roasting and Grilling


You will be required to complete a range of written assignments. You will also be required to demonstrate some skills while being observed by your tutor.

Enrichment Opportunities

There are a variety of enrichment opportunities on offer throughout the year, including trips and external visits.

Career and Progression

Successful completion of this course will enable you to seek employment in a wide variety of catering establishments with the prospect of promotion or the opportunity to progress to further study at Level 3.
